I am just setting up my shop and it seems that there are a TON of items to choose from. What is a good number as far as items to offer. Obviously I don’t want to offer 10 different types of shirts but it’s also good to have variety.

I personally choose between 10 and 15 products per design. Depending on the design of course. If your design is created for a baby bib you should not put it on a women’s shirt just for variety’s sake. But you surely know that. 
Nevertheless - your customers are not necessarily limited to the products you choose for the designs. When you enable the customize tool (settings > page settings > customize tool), your customers can choose any product they like from our assortment.
